Mediterranean Diet

Gradually struggling against cancer! I invite you to notice in your daily life how many “unhealthy” things we are USED to eating. How many servings of bread? How much bad fat content? How many carbohydrates and put the scale on the other side how much fruit and how many vegetables?

The problem with this; is that, at the end of the day, it turns out that the HABIT is so

ingrained that we then need that which is causing us so much harm.

My case is a very very particular case. What I am doing and deciding is focused on the type of cancer. But, it doesn´t hurt that I tell you and share with you that every day a person in El Salvador bases their diet off of these 10 Rules and other countries are not left out.

Take note. ——————————- The Mediterranean diet is a way of eating based on the traditional cuisines of Greece, Italy and other countries bordering the Mediterranean Sea. Plant-based foods, such as whole grains, vegetables, legumes, fruits, nuts, seeds, herbs and spices, are the basis of the diet.

Speaking a little about my cancer, as I have said before, we are facing Triple Negative Cancer, which means that there are no hormones involved, therefore my doctors have emphasized making a radical change in the diet, eliminating the consumption of flour, pasta, rice, tortillas. Reduce the consumption of red and fatty meats, sausages, products containing preservatives such as canned, bagged and bottled products, this of course includes carbonated drinks. As for dairy products, all those high-fat products such as cream and the delicious and varied cheeses, staying with fresh cheeses and cottage cheese, and increasing the consumption of fruits and vegetables and adding exercise to the diet.

The first thing that comes to my mind is what am I going to eat then? The fact is that I am struggling to create a different way of life. This is about learning to LIVE differently, I am learning to live with cancer at my side, it is a silent enemy that threatens my life at every step, I must understand and appropriate new disciplines with the intention that my body begins to receive all the good things that natural products can offer me; so that, together with the treatment, we can gain ground against the excessive spread of bad cells. This is seen from a human and medical point of view.

Always on the other side I am seeing God, all these things are what we humanly must do and fight to maintain, doctors and we do what we have to do, we fight every day with the different side effects, allergies and what this fight brings with it., trusting that God works in the impossible and in everything that we cannot see or understand.

Sometimes the thoughts come that everything we consume contains in some way some product that is harming human beings, and therefore so many types of cancer. I have decided to fight and I will continue to cry out to God for a miracle. At the same time, I want to be able to live in peace with what I do and decide in my diet, which is a small part of everything that cancer represents in our lives at this moment. In the end we are on a path where all this would not make sense if we did not believe that there is also a God who can work miraculously.

It would be unconscious of me to ask for a miracle where I don´t even make an effort to take care of myself in some way by working and fighting for health and my own life. We continue forward in this fight, making smart decisions. But I can't lie, there are days that are very difficult in terms of diet, since in fact I really want to eat those things that I like. Or rather I should say that some things, because they are new, we must find a way so that they are not boring. The kitchen awaits me with new culinary creations which I will be sharing later.

The most important thing is to make the new HABIT.
